Carrot Soup My Way

The perfect carrot soup my way recipe with a picture and simple step-by-step instructions.

  • 1 KG Carrot
  • 2 Pc. Potato
  • 1 Pc. Red onion
  • 2 Toes Chopped garlic
  • 0,5 Can Coconut milk
  • 1 pod Chilli red
  • 3 tbsp Lemongrass
  • 1 tbsp Yellow curry powder
  • 1 Pc. Orange
  • 3 tbsp Vegetable broth
  • 1 tbsp Lavender sugar
  • 1 branch Thyme
  1. Fry the onions, chilli and knola leek in a little olive oil. Then add the roughly chopped carrots and potatoes and fry them well. Pour everything up with the water and vegetable stock and bring to the boil. Then add the coconut milk, lemongrass, curry powder and the juice of the orange and let everything simmer for 15 minutes. In the meantime, heat a small pan with a little palm, add the finely diced carrots and fry a little … Then add the lavender sugar and let it caramelize. Arrange the soup on plates and serve with the diced carrots in the middle, the Tyminan sprig on top and the coconut milk all around.
