Carrot Soup with Mint

The perfect carrot soup with mint recipe with a picture and simple step-by-step instructions.

  • 200 g Potatoes, floury
  • 500 g Carrots
  • 1 Shallot
  • 1 tbsp Butter
  • 8 dl Vegetable broth
  • 3 dl Cream
  • Some mint leaves
  • Salt and pepper
  1. Cut the carrots, potatoes and shallot into pieces.
  2. Let the butter warm up in a large pan. Steam the vegetables.
  3. Pour in the stock, bring to the boil, cover the vegetables and simmer for approx. 20 minutes until soft.
  4. Pour in the cream, puree and season. Arrange the soup in soup plates, cut the mint into strips and sprinkle over them.
