Carrot Soup with Mint
The perfect carrot soup with mint recipe with a picture and simple step-by-step instructions.
- 200 g Potatoes, floury
- 500 g Carrots
- 1 Shallot
- 1 tbsp Butter
- 8 dl Vegetable broth
- 3 dl Cream
- Some mint leaves
- Salt and pepper
- Cut the carrots, potatoes and shallot into pieces.
- Let the butter warm up in a large pan. Steam the vegetables.
- Pour in the stock, bring to the boil, cover the vegetables and simmer for approx. 20 minutes until soft.
- Pour in the cream, puree and season. Arrange the soup in soup plates, cut the mint into strips and sprinkle over them.
