Carrot Stew with Smoked Pork

Ingredients
 

  • 400 g Kasseler
  • 50 g Bacon
  • 1 l Meatsoup
  • 4 Onions
  • 600 g Carrots
  • 1 Kohlrabi
  • 500 g Potatoes
  • 2 tbsp Clarified butter
  • 1 tsp Curry
  • Salt
  • Pepper
  • 1 tsp Chilli from the mill
  • 1 tsp Maple syrup
  • 1 Clove of garlic
  • Sugar

Instructions
 

  • Pat the meat dry, dice bite-sized and simmer in the meat broth with the finely chopped bacon for about 50 minutes.
  • Peel the onions and dice finely. Press the garlic through the press. Peel the carrots and kohlrabi and cut into cubes. Heat the clarified butter in a saucepan and sauté the onions and garlic until translucent. Add the carrot cubes and sauté briefly. Add the carrots and kohlrabi to the meat and simmer for another 25 minutes.
  • Peel, wash and dice the potatoes. Add to the stew and cook for another 20 minutes. Season the stew with curry, salt, pepper, a pinch of sugar, chili and maple syrup. Garnish with a little parsley to serve. Farm bread tastes good with it.
