Ingredients

  • 500 g Kasseler rib spear raw smoked
  • Water
  • 1 Bay leaf
  • 3 Black peppercorns
  • 1000 g Turnip
  • 500 g Carrots
  • 1 Leek
  • 300 g Potatoes
  • Parsley crispy fresh
  • Salt and pepper

Instructions

  • Cover the kasseler with water and bring to the boil together with the bay leaf and peppercorns and cook for 30-45 minutes. If you can loosen the bones easily, the meat is done.
  • In the meantime, peel the turnip, carrots and potatoes and cut into cubes. Clean the leek and cut into rings. Put everything in a colander and rinse thoroughly.
  • When the meat is done, remove it from the pot, remove it from the bones, cut into cubes and set aside.
  • Cook the vegetables in the broth. Take half of the vegetables out of the broth with a ladle and mash the other half. Put the removed vegetables back into the pot, season with salt and pepper and stir in the chopped parsley.
  • Place the meat cubes on the stew and serve.
