Ingredients for 2 servings:
- 4 large carrots
- 1 tbsp oil, for frying
- 50 ml orange juice
- salt and pepper
- 1 tsp coriander
- 1 tbsp parsley, fresh, chopped, if desired
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
from grated carrots
Wash, peel, and coarsely grate the carrots. Heat the oil in a pan and sauté the carrots until soft (when the carrots “collapse,” they’re done). Deglaze with the orange juice and season with salt, pepper, and coriander. Allow the orange juice to reduce. Stir in 1 tablespoon of chopped parsley, if desired.
