Carrots Coconut Soup

- 600 g Carrot red
- 2 Pc. Chopped onion
- 2 Pc. Garlic cloves chopped
- 1 Pc. Chilli fresh
- 1 tbsp Olive oil
- Coriander seeds
- 600 ml Soup
- 400 ml Coconut milk
- 1 Pc. Lemon fresh
- Salt
- Pepper
- Fry the onion, garlic and chilli finely in olive oil. Clean the carrots and cut into pieces, add the onion, garlic and chilli briefly to roast with soup and coconut milk. Simmer on a low flame until the carrots are cooked through. Add salt, pepper and lemon juice to the puree to taste. Croutons go well with it. Dice toast and fry in olive oil until crispy.
