Cashew almond cookies

Ingredients for 1 servings:

  • 100 g almond(s), coarsely ground
  • 200 g flour
  • 200 g cashew butter
  • 2 eggs
  • 3 tbsp Amaretto
  • 1 pinch of salt
  • 100 g brown sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Mix the dry ingredients. Cream the cashew butter, sugar, eggs, Amaretto, and salt until creamy. Add the dry ingredients and knead everything into a dough. Form the dough into two rolls and cut each roll into slices. Place them on a baking sheet with a backpacker’s bagel and bake in a preheated oven at 160°C (top/bottom heat) for about 15 minutes.
