Ingredients for 1 servings:

  • 1 liter of schnapps (yeast schnapps)
  • 700 g black currants
  • 1 vanilla pod(s)
  • 3 tbsp sugar

tasty alternative to a cassis liqueur, not so sweet

Wash the currants and remove the stems. Mix with the sugar and lightly mash with a fork. Place in a large jar and let stand for about an hour. Halve a vanilla pod and slit it lengthwise. Place in the jar. Pour in the yeast schnapps and let stand in a bright place for a year. After a year, strain the infusion and then filter it. I always do this using a very fine-mesh tea strainer. You can also filter it through a paper coffee filter. Remove the vanilla pod, rinse it, and let it air dry. It can also be used to flavor sugar.
