Catfish with sage butter

Ingredients for 4 servings:

  • 4 catfish fillets
  • 1 handful of sage
  • 1 lemon(s), juice
  • 1 pinch of salt
  • some flour
  • some olive oil
  • 80 g butter

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Wash the sage and tear it apart a little so the leaves aren’t too big. Wash the fish and check for bones if necessary. Rub the fish with lemon juice on both sides and season with salt. Then dust with flour. Heat the oil in a pan. Fry the fish for about 5 minutes on both sides. Remove the pan from the heat, tilt it slightly, and remove as much oil as possible with a spoon. Return the pan to the heat. Add the butter in pieces to the hot pan next to the fish and let it foam. Crisp the sage leaves in the butter. Serve the fish decorated with the sage leaves. Serve with mashed potatoes or parsley potatoes and a dry white wine.
