Cauliflower and cheese soup according to Odinette

Ingredients for 6 servings:

  • 1 cauliflower
  • 750 ml meat broth
  • 400 g processed cheese, reduced fat (2 packs of 200 g each)
  • 1 cup sour cream (200 g)
  • 500 g minced meat, lean
  • 1 onion(s)
  • herbs, fresh
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Wash the cauliflower and divide it into small florets. Add it to boiling salted water and cook for 10-15 minutes. Meanwhile, brown the minced meat with the finely diced onion. Then add the meat broth to the minced meat, melt the cream cheese and sour cream into the soup, and add the cauliflower. Bring to a boil, season with salt, pepper, and nutmeg, and let it simmer for another 10 minutes. Finally, add fresh herbs according to taste and season (do not cook them further, or they will turn gray).
