Cauliflower and minced meat casserole

Ingredients for 4 servings:

  • 400 g cauliflower
  • 300 g minced meat, mixed
  • 50 g onion(s)
  • 20 g butter
  • 200 ml cream, 30% fat
  • 1 tsp beef bouillon, instant
  • 80 g Emmental cheese, grated
  • salt and pepper
  • nutmeg

Working time approx. 35 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 5 minutes

Low carb and ketogenic

Blanch the cauliflower florets briefly in boiling salted water (approx. 3-5 minutes) so that the cauliflower still has a bite. Then cut the florets in half and arrange them on the well-buttered bottom of a baking dish. In a bowl, combine the ground beef with the finely chopped onions and season well with salt and pepper (add other spices, such as paprika and garlic, to taste). Then pour the ground beef mixture onto the cauliflower. Stir 1 teaspoon of beef bouillon, salt, pepper, and nutmeg, along with half of the grated Emmental cheese, into the cream. Spread this mixture on top of the casserole. Bake in a preheated oven at 200°C for 25 minutes. Halfway through baking, sprinkle the remaining Emmental cheese over the top and finish baking. This creates a nice cheese crust. 481 kcal per serving.
