Ingredients for 4 servings:
- 1 kg minced meat, mixed
- 1 cauliflower
- 200g bacon
- 1 large onion(s)
- 3 eggs
- salt and pepper
- e.g. mustard
- Caraway seeds
- marjoram
- Paprika powder
- 50 g low-fat curd cheese
- e.g. bacon, diced
- n. B. cheese, grated
Instructions
Working time approx. 45 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 55 minutes
Cauliflower wrapped in minced meat and bacon. Suitable for low-carb or SIS diets.
Clean the cauliflower and cut a cross into the stalk. Boil whole in salted water for about 10 minutes. Dice the onions into small cubes. Season the minced meat with salt, pepper, mustard, caraway, marjoram, paprika, and caraway, and mix with the onions, eggs, and quark. The onions can also be lightly toasted beforehand. For added flavor, toasted bacon or bacon bits and grated cheese can be mixed into the minced meat mixture. Drain the cauliflower and place it in a slightly larger casserole dish while it’s still hot. Cover the cauliflower evenly with the minced meat and then spread the bacon strips over the entire surface of the minced meat. You can also use diced bacon instead of bacon strips. Simply spread them over the entire surface and press them down. The minced meat casing will dry out a little more with diced bacon than with strips. Preheat the oven to 180°C (top/bottom heat) and bake the cauliflower bomb for about 1 hour. A light salad is recommended as a side dish for the food combining/SIS version. Boiled potatoes and a light sauce (perhaps made from the cauliflower water) are also delicious. Tip: If you don’t want to use a food combining dish, you can replace the low-fat quark with two stale, soaked, and squeezed-out rolls. This will make the minced meat casing a little less firm.
