Cauliflower cheese cookies

Ingredients for 4 servings:

  • 300 g cauliflower, raw
  • 150 g flour
  • 100 g cheese, e.g. Emmental or Gouda, grated
  • 1 egg(s)
  • 2 handfuls of parsley
  • salt and pepper
  • nutmeg
  • Garlic
  • 1 shallot(s)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Wash the cauliflower, drain, and shred it in a food processor until it’s about the size of couscous. Finely chop or mince the shallot and parsley, add it to a large bowl with the cheese and cauliflower, and season with the spices listed. Now add the sifted flour and egg to the mixture and stir well. Heat oil in a pan and fry about 1 tablespoon of batter per cookie on each side for about 4-5 minutes until golden brown.
