Ingredients for 4 servings:
- 2 tbsp butter or margarine
- 1 onion(s), finely chopped
- 4 garlic cloves, finely chopped
- 200 g potatoes
- 400 g cauliflower, cut into florets
- 2 tbsp oat flakes
- 1 shot of white wine
- 750 ml vegetable broth or meat broth
- 200 g cream
- 125 g cheese (butter cheese)
- Salt
- Pepper from the mill
- nutmeg
- 100 g ham, cooked
- 1 bunch chives, cut into rolls
Instructions
Working time approx. 35 minutes; Total time approx. 35 minutes
Heat the butter or margarine in a saucepan. Add the finely chopped onion and the finely chopped garlic cloves and sweat until translucent. Peel the potatoes and cut into cubes. Add the washed cauliflower florets and potatoes to the onion and sweat briefly. Sprinkle with oatmeal, deglaze with white wine, and top up with the stock. Let the soup simmer for about 15-20 minutes. Then stir in the cream and grated cheese. Melt the cheese completely, stirring constantly. Season to taste with salt, pepper, and nutmeg. Dice the ham, stir into the soup, and heat through. Finally, sprinkle with chopped chives and serve.
