Ingredients for 2 servings:
- 300 g cauliflower
- 100 g cheese (mountain cheese, Emmental, Gouda)
- 2 eggs
- e.g. salt and pepper
- 1 pinch(s) nutmeg
- 2 tbsp oil
- 2 tbsp breadcrumbs, optional
- ½ bunch parsley

Cook the cauliflower in salted water for about 12-15 minutes; alternatively, you can use leftover cauliflower from the day before. In the meantime, coarsely grate the cheese and place it in a bowl. Drain the cooked cauliflower, let it cool slightly, and then mash it slightly and add it to the cheese. Add the eggs and season generously with salt, pepper, and nutmeg. Mix all ingredients with your hands until firm. Add a little breadcrumbs if it’s too moist. Then form the cauliflower patties, heat the oil in a pan, and fry for 3-4 minutes on each side until golden brown. The patties can be served hot or cold.
