Ingredients for 2 servings:

  • 1 head of cauliflower
  • salt water
  • 1 bunch of spring onions (max. 5 small ones)
  • some butter
  • some salt
  • nutmeg
  • 1 pack of soy milk (soy drink)

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

Separate the cauliflower florets from the stem, wash the spring onions, remove the outer skin, and cook them with the cauliflower in salted water. (Tip: Only add salt to the cooking water when it’s bubbling.) When the cauliflower is tender, puree it with the warmed soy milk and a knob of butter (like mashed potatoes), season with nutmeg, and a little more salt, if desired.
