Cauliflower salad with a twist

Ingredients for 4 servings:

  • 1 head of cauliflower
  • 1 small onion(s)
  • 1 tbsp mayonnaise
  • 1 tbsp ketchup
  • 1 tbsp mustard
  • 1 tbsp oil
  • 1 tbsp vinegar
  • 1 tbsp yogurt
  • salt and pepper
  • Parsley
  • chives

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 40 minutes

Divide the cauliflower into florets and cook until al dente, then let cool. Meanwhile, finely dice the onion. Mix the diced onion with the dressing ingredients. Add the cauliflower and fold in. The salad tastes best when it’s allowed to sit for a while.
