Cauliflower with cheese sauce

Ingredients for 3 servings:

  • 1 head of cauliflower
  • 1 cup of Greek yogurt, approx. 150 g
  • 50 g Emmental cheese, grated
  • 50 g Cheddar cheese, grated
  • salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Cauliflower Mac’n’Cheese-Style

Clean the cauliflower, divide it into roughly equal-sized florets, and boil in salted water for about 10 minutes. Drain the cauliflower and let it drain. Place the cauliflower florets in a saucepan and set the stovetop on medium heat. Season the florets with salt and pepper and stir in the yogurt, followed by the grated cheese. Serve the cauliflower when the cheese has melted. Tip: The florets should be well coated with sauce. For large cauliflower, use more yogurt and cheese.
