Ingredients for 1 servings:

  • 30 speculatius cookies
  • 80 g butter
  • 400 g double cream cheese
  • 500 g low-fat curd cheese
  • 160 g sugar
  • 1 packet of vanilla sugar
  • 3 eggs
  • 1 tsp cinnamon
  • ½ tsp cardamom

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Mix the crumbled speculatius biscuits with the melted butter, place them in a greased springform pan (26 cm diameter), and press them firmly into the base. (The back of a spoon works best.) While the oven is preheating, place the pan in the oven. In the meantime, beat the low-fat quark, cream cheese, sugar, vanilla sugar, and eggs together until fluffy. Add the cinnamon and cardamom and spread them on the base. Bake for 40 minutes at 170°C (330°F) top/bottom heat or 140°C (284°F) fan-assisted. The cake tastes best when left to “sit” for a day. This allows the flavor of the speculatius biscuits to permeate the cheese mixture. For a change, you can also stir Nutella into the cheese mixture, or use chocolate cream cheese instead of regular cream cheese.
