Ingredients for 4 servings:
- 200 g leaf spinach
- 600 g dumplings
- 200 g dip (guacamole), optionally 4 avocados
- 2 onions
- 3 garlic cloves
- some chives, finely chopped
- olive oil
- 1 head of cauliflower
- 1 bag of cheese substitute, vegan

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Peel and finely chop the onions and garlic, and fry in a little oil. Add the guacamole, optionally peeling 4 ripe avocados and mashing them with a fork. Stir in the spinach leaves and simmer for about 5 minutes while stirring. Add salt, pepper, and finely chopped chives to taste. Cover the cauliflower in a saucepan and simmer over medium heat for about 15 minutes. Add the dumplings to boiling water and let stand for 20 minutes. Serve, melting the vegan cheese over the steaming cauliflower. Approx. 450 kcal per serving.
