Ingredients for 4 servings:

  • 1 citron (Cedri, Cedro)
  • 100 ml olive oil, good quality
  • salt and pepper
  • ½ bunch parsley

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Cedri salad

Rinse the cedar lemon with hot water and cut into very thin slices (approx. 2 mm thick). Arrange them on a plate in a flake-like pattern. Drizzle with olive oil. The cedar lemon slices should be completely covered with oil. There should be no white, exposed areas. Season with salt and freshly ground pepper. Marinate for approximately 30 minutes. Rinse the parsley, pat dry, and finely chop. Sprinkle over the lemons and serve. The amount of olive oil depends on the size of the cedar lemon.
