Celery and apple vegetables

Ingredients for 4 servings:

  • 400 g apples
  • 1 m.-large celeriac
  • 125 ml grape juice, light
  • 100 g butter
  • 2 tbsp lemon juice
  • 1 bunch of chives
  • ½ tsp salt

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Wash and trim the chives, pat dry, and cut into rolls. Set the rolls aside. Add 1 tablespoon of lemon juice to a bowl with 2 liters of water. Peel, wash, core, and slice the apples. Add the apple slices to the lemon water and set aside. Peel, peel, and wash the celery. Slice 500g of celery. Reserve the remaining celery for something else. Bring the grape juice, 1 tablespoon of lemon juice, and salt to a boil, then simmer the celery slices with the lid on for about 15 minutes. Remove the apple slices from the lemon water and add to the celery. Simmer for another 8 minutes. Drain and collect the liquid. Reduce the liquid to about 100ml. In the meantime, cut the butter into small pieces. Then whisk the butter into the liquid. Pour the sauce over the vegetables and serve sprinkled with chives.
