Ingredients for 4 servings:
- 500 g celery
- 125 ml cream
- 2 tbsp clarified butter
- 1 m.-sized onion(s)
- 1 tsp salt, more if needed
- ½ tsp pepper, more if needed
- 1 pinch(s) nutmeg, freshly grated
- 1 tsp parsley, chopped
- 500 ml vegetable stock
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Roughly chop the celery and onion. Heat the clarified butter and sauté the celery and onion. Deglaze with vegetable stock and simmer over low heat for 20 minutes. Purée everything with a hand blender until smooth. Season with nutmeg, salt, and pepper.
