Celery mashed potatoes

Ingredients for 1 servings:

  • 200 g celery
  • 100 g potatoes
  • 200 ml vegetable stock
  • 10 g parsley, fresh
  • 10 g butter
  • Salt
  • Black pepper, freshly ground
  • Nutmeg, freshly grated

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

For celery lovers

Halve the celery stalks and cut into small slices. Peel the potatoes, halve them, and cut them into small cubes. Bring the celery and potatoes to a boil in a saucepan with the stock and a pinch of salt. Reduce the heat to low and simmer with the lid on for about 20 minutes until soft. Then drain the vegetables, leaving a small amount of cooking water. Be sure to collect the cooking water—it makes a wonderful base for your next soup or sauce. Mash the vegetables with a potato masher and butter until the mixture is tender, then stir in the finely chopped parsley. Season to taste. If desired, transfer the mash to a serving dish and serve with any side dish you like.
