Celery salad with crab

Ingredients for 8 servings:

  • 1 bunch of celery
  • 400 g crab
  • 3 lemons
  • 80 ml olive oil
  • 1 bunch of parsley
  • 1 bunch peppermint
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the celery stalks off and separate them, using only the attractive stems. Trim the dried parts from the top of the celery stalks and wash them. Cut the celery into wafer-thin slices. Rinse the crab with warm water and toss with the celery. Squeeze the lemons and toss with the olive oil. Season with salt and pepper. Toss with the salad. Serve in a bowl. Wash the parsley and peppermint, pat dry, roughly chop, and scatter over the salad.
