Ingredients for 4 servings:
- 30 g butter
- 1 small onion(s), chopped
- 80 g lentils, red
- 1 liter vegetable broth
- 200 g celery
- 4 tbsp crème fraîche
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Sauté the onions in the butter until translucent, then add the lentils and sauté for 1 minute. Add the stock and simmer over low heat for about 20 minutes. Meanwhile, prepare the celery stalks and cut into approximately 1/2 cm wide pieces. The leaves can be used for garnishing. After the 20 minutes of cooking time, add the celery to the soup and simmer for another 8-10 minutes. Stir in the crème fraîche, garnish with the celery leaves, and serve.
