Celery vegetables

Ingredients for 4 servings:

  • Vegetable oil, neutral tasting
  • 1 small onion(s)
  • 1 tbsp, leveled flour
  • 300 ml vegetable stock
  • 2 corners of processed cheese
  • 1 celeriac
  • 1 half garlic clove(s)
  • 1 dash of cream
  • ½ tsp horseradish
  • pepper
  • Nutmeg, freshly grated

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

Peel and wash the celery, and cut into 2-centimeter cubes. Dice the onion. Finely chop the garlic. Sauté the onion in neutral vegetable oil until translucent, sauté with a little flour, then deglaze with vegetable stock and bring to a boil. Add the cheese wedges and let them melt. Adjust the consistency with vegetable stock. Now add the diced celery and garlic and simmer until the celery is tender. Just before the end of the cooking time, stir in a generous splash of cream and season with horseradish, pepper, and nutmeg.
