Ingredients for 4 servings:
- 3 tbsp olive oil
- 1 onion(s)
- 1 garlic clove(s)
- 3 bell peppers
- 4 cans tomatoes, chopped
- 5 tbsp tomato paste
- tsp, sautéed cumin
- 2 tsp, crushed paprika powder, sweet
- 4 eggs
- 1 feta cheese
- Salt
- chili powder
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Dice the onion, garlic, and bell pepper. Heat the oil in a pan, add the onion, garlic, and bell pepper, and sauté for about 5 minutes on medium heat. Add the canned tomatoes, tomato paste, and seasonings, then simmer for about 10 minutes. Add the feta and stir. Season to taste. Use a tablespoon to make indentations in the tomato mixture for the eggs and crack an egg into each one. Cover and simmer for about 5 minutes. Serve with white bread or pita.
