Chakalaka is a traditional South African side dish to meat dishes and stews. Versions range from mild to super-spicy.

A wok is ideal for this preparation. Sauté the onions, garlic, and chilies in half the oil until softened. Add the bell peppers and stir-fry for 2-3 minutes. Then add the cabbage, carrots, cayenne pepper, bell peppers, and the remaining oil and continue stirring until the vegetables are cooked but not too soft. Stir in the peas and season with salt and pepper. It’s best to let them stand for a few hours to allow the flavor to develop. Can be eaten hot or cold.
