makes about 20 cookies

Make a shortcrust pastry from the first seven ingredients. Chill for about 1 hour. Roll out the dough to about 1 mm thick and cut out cookies about 6 cm in diameter. Place them on a prepared baking sheet and bake for about 10 minutes at 200°C (400°F). Beat the melted, cooled chocolate coating with butter, powdered sugar, champagne, and lemon juice until fluffy. Use this mixture to stick two cookies together. To decorate, melt the chocolate and draw thin lines over the cookies.
