Ingredients for 4 servings:

  • 8 bulb(s)
  • 2 tbsp lemon juice
  • 400 ml sparkling wine
  • 1 stalk(s) cinnamon
  • 1 carnation(s)
  • 3 grains of black pepper
  • 3 tbsp sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 5 hours; Total time approx. 5 hours 30 minutes

Peel the pears, leaving the stems attached. Carefully remove the cores, starting at the blossom, and then rub the pears with lemon juice. Bring the sparkling wine to a boil in a saucepan with the spices and sugar. Add the pears and simmer for about 6 minutes. Remove from the heat and let the pears cool in the liquid. Let the fruit rest in the strained liquid in the refrigerator for at least 4 hours before serving. Place 2 pears per person in a dessert bowl and pour the cold liquid over them.
