Ingredients for 8 servings:

  • 3 large onions
  • 1 tbsp oil
  • 600 g minced meat, mixed
  • 2 bell peppers
  • 200 g pickled gherkins of your choice
  • 500 g sauerkraut
  • 150 g tomato paste
  • 1 liter meat broth or vegetable broth
  • 2 tsp sugar
  • 1 jar pearl onions, approx. 300 – 400 ml
  • 1 jar capers with liquid, approx. 20 g drained weight
  • lots of caraway
  • e.g. Tabasco
  • e.g. Worcestershire sauce
  • e.g. soy sauce
  • e.g. ketchup
  • n. B. Thyme
  • e.g. marjoram
  • e.g. cayenne pepper
  • e.g. salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Finely dice the onions and brown them in the oil over medium heat. Add the ground beef and fry, increasing the heat if necessary. Dice the bell peppers and pickles, and finely chop the sauerkraut. Then add the tomato paste, bell peppers, sauerkraut, and pickles to the ground beef and simmer for 10 to 15 minutes. Add the meat broth and simmer the stew for 30 minutes. Then stir in the sugar, pearl onions, capers with their liquid, caraway seeds, Tabasco, and the remaining spices, as well as any ingredients to taste. Serve the stew with baguette and a dip.
