Ingredients for 2 servings:

  • 2 fish(s) (char – salmon trout or trout also works)
  • lemon juice
  • Salt
  • Black pepper, freshly ground
  • 2 cloves garlic
  • 1 lemon(s), untreated, quartered
  • 2 sprigs rosemary

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Rub the fish inside and out with lemon juice, salt, and pepper. Then, stuff a halved garlic clove, a sprig of rosemary, and two lemon wedges into the belly of each char. Place the fish on a sheet of aluminum foil coated with olive oil. Loosely seal the foil. Bake the char in the oven at 180°C for 30 minutes. Serve with baguette and aioli and foil-baked tomatoes (seasoned with garlic, green pepper, salt, and thyme).
