Ingredients for 4 servings:
- 1 char
- 1 tbsp capers
- 1 tsp lemon zest
- 1 tbsp spring onion(s), green part only
- 1 tbsp cucumber(s)
- 1 tbsp arugula
- 1 tbsp cress
- olive oil
- salt and pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes

Wash, fillet, and skin the char. Chop the fillets into small pieces and chill. Chop the capers. Finely chop the spring onion. Chop the arugula, and grate the cucumber. Mix everything well with the char, lemon zest, and cress. Season with salt and pepper. Add olive oil, mix again, and serve. Side dish: baguette.
