Ingredients for 2 servings:

  • 400 g beef fillet(s)
  • some salt
  • some pepper freshly ground black
  • 4 tbsp fat for frying

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Remove the skin from the meat and flatten it widthwise with the heel of your hand. Rub it all over with salt and freshly ground pepper. Heat the cooking fat in a pan and sear the meat well on all sides. Cover and continue to roast over low heat for 20 minutes. After the roasting time, keep the meat warm for another 5 minutes (wrap in aluminum foil if necessary), then slice diagonally. This allows the juices to distribute and prevents the fillet from becoming dry. In traditional cuisine, this is served with Béarnaise sauce and a generous vegetable platter.
