Ingredients for 5 servings:

  • 1.1 kg flour
  • 500 ml water
  • 1 tbsp salt
  • 3 eggs
  • 1 kg minced meat
  • 3 onions
  • 200 ml milk
  • salt and pepper
  • Fat, for frying

Working time approx. 1 hour 10 minutes; Rest time approx. 3 hours; Total time approx. 4 hours 10 minutes

Fried dumplings from Central Asia

Pasta dough: Dissolve 1 tablespoon of salt in lukewarm water, add 3 eggs, and mix well. Sift 1 kg of flour, add the liquid, and knead well. The dough will become nice and soft and elastic if left covered for a longer time (about 3-6 hours). However, you should knead the dough every hour. Filling: Mix 1 kg of ground meat with finely chopped onions, season with salt and pepper, and add a little milk (about 1 glass) for a moist texture. Be careful, though – the filling shouldn’t be too runny, or the dough will stick. Preparation: Roll out the dough and cut out circles (about 10 cm in diameter). Place the filling in the center and fold one half over the other. The parcels are pan-fried or deep-fried in hot oil. Serve with sour cream, ketchup, or salad.
