Cheese and apple crumble cake

Ingredients for 1 servings:

  • 250 g flour
  • 125 g sugar
  • 1 pinch of salt
  • 1 packet of vanilla sugar
  • 125 g butter
  • 1 jar applesauce, 355ml
  • 150 g butter or margarine
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 1 lemon(s), grated peel, untreated
  • 1 tbsp lemon juice
  • 2 eggs
  • 500 g low-fat curd cheese
  • 1 packet of vanilla pudding powder

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 25 minutes

Mix the flour (except for 2 tablespoons), sugar, salt, and vanilla sugar. Melt the fat and pour over the cake. Using a dough hook, mix the ingredients into crumbles. Sprinkle the remaining flour over the crumbles and shake everything together in the bowl. Grease a springform pan and press 2/3 of the crumble mixture firmly into the base. Spread the applesauce on the base. Beat the fat until fluffy, then stir in the sugar, vanilla sugar, lemon zest, and lemon juice. Add the eggs and beat until creamy. Stir in the quark and pudding powder. Spread the quark mixture over the applesauce and sprinkle the remaining crumble mixture over the edge. Bake at 200 degrees Celsius for approximately 45-50 minutes.
