Cheese and sausage salad

Ingredients for 6 servings:

  • 800 g sausage, e.g. meat sausage, Lyoner etc.
  • 400 g cheese, Emmental (or other hard cheese)
  • 200 g gherkins
  • 2 large onions
  • 2 garlic cloves, fresh
  • 8 tbsp white wine vinegar
  • 12 tbsp oil
  • 2 tsp salt
  • 4 tsp mild mustard
  • pepper
  • Paprika powder (hot)
  • Chives, fresh
  • possibly apple
  • possibly corn

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Total time approx. 50 minutes

with vinegar-oil-mustard sauce

Thinly slice the sausage and gherkins and cut the cheese into thin strips. Set aside. Then chop or thinly slice the onion, press the garlic cloves, and mix well with the vinegar, salt, mustard, just under 1/4 teaspoon pepper, and 1/2 teaspoon paprika. Finally, add the oil and mix to make a salad dressing. Loosely mix all the salad ingredients into the dressing and let it sit for a while. Sprinkle with fresh chives before serving. This goes perfectly with dark farmhouse bread or pretzels. Serve with a cold beer or mineral water, if desired. On warm summer evenings, you can also add a chopped apple and 200g of corn. This gives the salad a fresh touch.
