Place all of the dough ingredients in a bowl and knead into a smooth dough. Wrap the dough in cling film and let it rest in the refrigerator for about 30 minutes. In the meantime, prepare the quark mixture. Place all of the quark mixture ingredients in a bowl and mix well. Divide the dough. Roll out each piece on a floured surface and use a glass to cut out circles for the base. Line the bottoms of the baking cups with the dough. Spread the quark mixture evenly. Add 1-2 tablespoons of flour to the remaining dough and use your hands to form crumbles. Spread the crumbles evenly over the surface. Bake in an oven preheated to 180°C for about 25-30 minutes. Remove from the oven and let cool on a wire rack.
