Ingredients for 4 servings:
- 250 g bread(s) (dumpling bread)
- 350 ml milk, warm
- 1 medium onion
- 10 g butter
- 250 g cheese (Emmental or mountain cheese), grated
- 40 g flour
- 2 eggs
- 3 tbsp parsley
- 1 tsp salt and pepper
- nutmeg
- 4 servings of broth, of your choice
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes
Pour warm milk over the dumpling bread and let it sit for 1 hour. In the meantime, dice the onion, fry in butter until golden brown, and let it cool. Mix the dumpling bread with all the ingredients, season, and knead. Using a tablespoon, form dumplings and let them sit in salted water for 20 minutes. Prepare the broth and serve on plates. Remove the dumplings with a slotted spoon and add them to the water.
