Ingredients for 2 servings:

  • 100 g corn flour or rice flour
  • 60 ml chicken broth
  • 250 g cheese, a type that melts well
  • 100 g white cabbage, cut into strips
  • 30 ml vinegar
  • 1 medium-sized tomato(s), cut into small cubes
  • a few stalks of coriander
  • 1 pinch of salt
  • 1 large carrot(s), cut into strips

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 10 minutes

Corn or rice balls filled with cheese. National dish of El Salvador

Knead the flour, salt, and chicken broth into a smooth paste and then let it rest for about 30 minutes. Knead the dough into small balls and fill them with cheese. Flatten them with your hands and fry them in a pan or on a hot stone with a little oil. Serve with “crudo,” a mixture of the remaining ingredients. In El Salvador, this dish is sold on every street corner. Alternatively, you can fill them with: – red bean paste and cheese – pumpkin – shrimp and cheese – or whatever you have lying around in the kitchen.
