Ingredients for 3 servings:
- 1 pork fillet(s), approx. 500 g
- 150g bacon
- 60g Gouda
- 400 g whipped cream
- 1 tsp meat broth, clear
- 200 ml water
- some oil for the roasting pan
- salt and pepper
- 1 jar potatoes, peeled and cooked, drained weight 420 g

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes
in cream sauce with potatoes
Wash the pork loin, pat dry, and trim cleanly. Now score the meat lengthwise (!) to about two-thirds of its thickness. Season the fillet inside and out with pepper and salt, and gently rub in the spices. Fill the cut with Gouda and close the loin by wrapping the bacon slices around it. If necessary, secure the bacon with roulade pins or toothpicks. Now brown the loin well, then add the cream and simmer everything over medium heat for about half an hour. After 15 minutes, pour in the meat broth. After another 15 minutes, turn the loin over and simmer for another 15 minutes. Check with a fork whether the meat is tender. If the meat is tender, add the drained potatoes to the cream sauce and heat through. Lettuce goes well with this.
