Cheese meatballs with pepper salad

Ingredients for 4 servings:

  • 2 bell peppers, red and green
  • 3 onions
  • 1 dry bread roll
  • 500 g minced meat, mixed
  • 1 egg(s)
  • salt and pepper
  • 1 tsp chili powder
  • 1 slice(s) cheese, medium-aged Gouda, thick slice
  • 6 tbsp oil
  • 2 tbsp vinegar (wine vinegar)
  • 1 pinch(s) of sugar
  • Water for soaking, lukewarm

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Clean and wash the bell peppers. Finely dice half each of the red and green bell peppers. Soak the bread roll in lukewarm water. Dice 2 onions. Knead the minced meat, squeezed-out bread roll, egg, and diced bell peppers and onions. Season generously with salt, pepper, and chili powder. Cut the cheese into 8 cubes. Heat 2 tablespoons of oil. Form the meat mixture into 8 meatballs, pressing 1 cheese cube into the center of each. Fry over medium heat for 4-5 minutes on each side. Mix together the vinegar, salt, pepper, sugar, and 4 tablespoons of oil. Cut the remaining bell peppers and onions into small pieces. Mix both with the salad dressing and let it marinate briefly. Serve with the meatballs. Boiled potatoes go well with them.
