Ingredients for 3 servings:

  • 300 g fusilli or other pasta
  • 200 g medium-aged Gouda
  • 150 g smoked bacon
  • 3 onions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

how my mother made them

Cook the pasta according to the package instructions. Dice the bacon and onions, coarsely grate the Gouda. Fry the bacon in a pan for about 3-4 minutes, add the onions and continue to sauté until the onions have browned. When the pasta is done, drain but do not rinse with cold water. Immediately toss with the cheese and the onion-bacon mixture until well combined. When the cheese is stringy and no grated cheese is visible, it’s done. Serve immediately. If you like it heartier, you can also use Emmental or a mix of Gouda and Limburger. I always use a plastic bowl for mixing and serving, as it makes it easier to clean. However, if you want to use a glass or porcelain bowl, soak it in cold water afterwards. I always eat these pasta with a few drops of Maggi.
