Cheese Omelette

Ingredients for 4 servings:

  • 2 tbsp butter
  • 1 tbsp flour, heaped
  • 250 ml milk
  • salt and pepper
  • 6 eggs
  • 2 small Camemberts
  • 250 g cranberry compote, from the jar
  • nutmeg

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Melt 1 tablespoon of butter and sweat the flour. Whisk in the milk and simmer gently for 5 minutes while stirring. Season the sauce with salt, pepper, and nutmeg. Separate the eggs. Beat the egg whites until stiff. Whisk the egg yolks with the sauce. Fold in the beaten egg whites. Cut the Camembert into thin slices. Fry the omelet mixture in batches over medium heat in the remaining butter to make 4 omelets. As soon as one edge is firm and golden brown and the surface is set but still slightly moist, place strips of cheese on one half of the omelet. Fold the other half over the top. Keep warm in the oven at 50°C until all the omelets are ready. Serve with cranberry compote. Boiled potatoes, a green salad, and a baguette are suitable as a side dish.
