Ingredients for 1 servings:

  • 200 g flour
  • 150 g butter
  • 2 tbsp crème fraîche
  • 200 g cheese (Gruyère, Emmental or similar), freshly grated
  • 1 pinch of salt
  • 1 pinch(s) sweet paprika powder
  • 1 egg yolk mixed with cream, for brushing
  • Cheese
  • Poppy seeds, sesame seeds, caraway seeds, sunflower seeds, etc.

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

good with wine or neutral aperitif

Knead the flour, butter, crème fraîche, and grated cheese into a shortcrust pastry and refrigerate. Roll out the dough thinly, cut out small shapes, brush with egg yolk and cream, and sprinkle with topping as desired. Place the cookies on a baking sheet with baking paper. Bake at 180°C (350°F) for about 10 minutes until golden brown. They will keep for about 3 weeks.
