Ingredients for 1 servings:

  • 75 g Parmesan, grated
  • 75 g almond flakes
  • 50 g flour
  • 50 g butter
  • 1 egg white
  • Cayenne pepper
  • Salt
  • Rosemary, dried, alternatively thyme

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 35 minutes

with Parmesan

Mix the flour, cheese, butter, and almonds with a hand mixer. Beat the egg whites with a fork and add them to the batter along with a little cayenne pepper and salt. Mix everything well again. Wrap in foil and refrigerate for about an hour. Preheat the oven to 200 degrees Celsius (fan). Line a baking sheet with baking paper. Roll out the dough. I do this without a rolling pin. Simply leave the dough on the spread-out foil, cover with another layer of foil, and flatten it with your hands. Use a cookie cutter to cut out cookies of your choice and place them on the baking sheet. Bake in the oven for 7-9 minutes. Then immediately sprinkle with rosemary and a little cayenne pepper and gently press them down with your fingers. Tastes good hot or cold. This quantity makes two baking sheets.
