Cheese – Shortbread

Ingredients for 1 servings:

  • 150 g wheat flour
  • 125 g grated cheese (Emmental or Gruyère)
  • 150 g butter, cold
  • 1 egg yolk
  • 1 egg yolk for brushing
  • ½ tsp water for brushing
  • some poppy seeds
  • sesame
  • Salt
  • Pizza seasoning

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Cheese feet

Quickly knead the flour with the cheese, butter, and 1 egg yolk. Wrap the dough in cling film and chill for 30 minutes. Then roll it out on a floured surface into a sheet approximately 3 mm thick. Cut out feet or other shapes and place on baking paper. Mix the egg yolk with water and brush the cookies with it. Sprinkle with spices to taste. Bake at 160°C fan-assisted oven or 175°C top/bottom heat until golden brown. Makes 40-50 cheese shortbreads.
