Cheese soup with ham dumplings

Ingredients for 4 servings:

  • 1 garlic clove(s), crushed
  • 2 onions, finely diced
  • 50 g butter or margarine
  • 2 tbsp flour
  • 1 liter of milk
  • 100 g ham, cooked
  • 1 bratwurst, uncooked
  • 150 g Cheddar cheese
  • pepper
  • nutmeg
  • 1 tsp broth, instant
  • 1 bunch chives, cut into rolls

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Fry the crushed garlic and finely diced onion in hot fat until translucent. Add the flour and fry. Pour in the milk while stirring and bring to a boil. Remove the pot from the heat – the soup will burn easily. Mince the ham in a food processor. Squeeze out the sausage and mix with the minced ham. Form the mixture into small dumplings. Let it simmer in hot water for about 8 minutes. Grate the Cheddar cheese and stir into the soup. Season with pepper, nutmeg, and stock. Now add the sausage dumplings to the soup. Sprinkle with chopped chives and serve.
