Cheese spaetzle

Ingredients for 4 servings:

  • 5 eggs
  • 500 g flour
  • 1 pinch of salt
  • 500 ml water (depending on consistency)
  • 50 g butter
  • Salt
  • 1 bag(s) of cheese, grated as desired
  • pepper
  • Paprika powder

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Bring a large pot of lightly salted water to a boil. Mix all ingredients up to and including the water, adding the water slowly as you may not need all of it. The dough should have a thick, sticky consistency. By now, the water should be boiling, and you can either roll the dough into spaetzle balls over a board or use a spaetzle or potato press to form the spaetzle. Add the spaetzle to the boiling water. As soon as they rise to the surface, remove them with a ladle. Lightly fry the spaetzle in a large pan in which you have melted the butter (please do not let the butter get too hot). Season with salt, pepper, and paprika. Of course, you can add other spices or herbs to taste, but generally, you should use at least these three. Now turn down the heat and sprinkle with cheese. Cover and cook for another 5-10 minutes at low heat.
